Vacations are time for activities and fun. My art and craft skills are pretty low but being a baker I love to engage my kids in cooking and baking.

I have a collection of some simple recipes which which are easy to prepare and delicious to
devour. Yesterday we baked some vanilla cookies. Almost everything from sifting to mixing, rolling to cutting was done by kids. I was only there to open the oven and put the tray inside and then to take it out, once cookies are done.
Cookie making is a great activity for kids 5 and above but my 2 and a half years old also enjoyed rolling the handful of dough which her elder siblings spared to give her :)
Here is recipe of Plain Vanilla Cookies ;
INGREDIENTS :
- Three cups of all purpose flour
- One cup softened butter or ghee
- One cup sugar
- Three eggs
- One tea spoon vanilla essence
- Two tea spoon baking powder
 |
| Sift flour with baking powder.( If desired add a pinch of salt after sifting. ) |
 |
| Beat butter, egg and sugar for five minutes. |
 |
| Add flour and mix at low speed till incorporated. |
 |
| Now knead with your hands till batter combines like a dough. ( Moms should do this step.) Now the dough is ready if you want to use a cookie press but if you prefer rolling and cutting then refrigerate for half an hour. A hand full chocolate chips can be added at this stage. |
  |
| Take a small portion, dust your board generously with flour and lightly roll to a 1/4 inches of thickness. |
 |
| You can add crushed almonds, walnuts or sesame seeds if you like. Simply sprinkle on the top and lightly press with rolling pin. |
 |
| Cut and arrange on a generously greased tray and bake in a preheated oven at 350 F for 7 to 10 minutes or until golden brown. Let them cool on a cooling rack or simply leave on the tray so that they can get crispy. |
